Crab Cakes

I make crab cakes once a year, not sure why only once but it’s sort of a tradition with me although it’s at no particular time but whenever I think of it or feel like having them. This recipe is from one of the older Martha Stewart cookbooks and is the only recipe for crab cakes I have ever used. It calls for jumbo lump  or lump crabmeat, has very little filler and is really delicious. As an aside I recommend lump not jumbo lump it makes it easier to form into patties and stays together better.  You can make your own bread crumbs by first grinding bread in a food processor then drying in the oven or use dried breadcrumbs from your supermarket. This is a super simple recipe that comes together very quickly.  They are not coated with bread crumbs although you could if you wish,  they have a nice amount of vegetables in them and are delicious served with cole slaw.

The recipe made exactly 12 nice sized cakes so my friends got a crab cake sandwich on fresh ciabatta rolls slathered with a dressing made from mayo, sriracha, pickle relish and ketchup then piled high with a homemade traditional cole slaw. I made a few changes in the recipe to suit me, Martha calls for 2 lbs crabmeat, I found 1 lb was sufficient and if I did use 2 lbs I would add an additional egg, more mayo and breadcrumbs.

Crab Cakes

Adapted from Martha Stewart Cookbook- Collected Recipes for Every Day

Makes 12 crab cakes or 22-24 appetizer size

1 cup dried breadcrumbs

2 large eggs lightly beaten

1 lb jumbo lump or lump crabmeat (picked over for cartilage)

1/2 cup chopped cilantro or parsley (I use parsley)

3 scallions  finely chopped

1 small red bell pepper- seeded and diced

1 small yellow bell pepper – seeded and diced (I didn’t have yellow so used green)

1 jalapeno pepper – seeded and diced (I used pickled jalapeño)

2/3 cup mayonaise

kosher salt and freshly ground pepper

Vegetable oil to fry

Gently mix all the ingredients together, you don’t want to break up the crab meat to much.

Form into patties, you can choose the size but make them quite thick. Heat some vegetable oil in  a skillet over medium high heat. Cook the crab cakes until browned on each side. Place them on paper towel or paper bag to drain. Serve hot. NOTE: Because there is very little filler you have to work a little to form into patties. If they absolutely won’t hold together add a little more mayo and breadcrumbs.

I happened upon a photo that the media outlet Pop Sugar took of Percy and put on their site. I was tickled to see this and thought he looked so cute smiling. This was taken at Pugs Take NYC event which by the way was a huge success raising $4150 for Pug Nation Rescue of LA and the little pug Bella has had the surgery and is being fitted for a wheelchair.

    Oh…that Martha Stewart…she does have some very good recipes…and with “Crab Cakes” lump crab meat and not much on the fillers is the trick

    …and PS: Percy needs a butcher bone…🐶

    • Yes she does some of her recipes are terrific. You know I’ve tried giving Percy bones but he won’t touch them. I have bought dental bones, try brushing his teeth it’s hard. I am scheduling a cleaning and there will be some extractions soon.

    • I keep marrow bones in my freezer. Just tried it again, he totally snubs it. I don’t think in his former home he got bones. Pugs have notoriously bad teeth, most pugs lose their teeth through extraction through the years. Last time I took him to the Vet she said he needs to have some teeth extracted they are not infected just not in good shape and I have to make the appointment to do that along with a cleaning. I hate the fact that he has to have general anesthesia it freaks me out.

    • Thank you France, yes Percy has the notorious bad teeth that are characteristic of pugs. Every pug I know has hardly any teeth. I wish that weren’t so because I hate having to have him put under general anesthesia. I try to give him marrow bones but he won’t touch them. Merci, merci tu es si belle.

    • Thanks skd, he has to have extractions and a cleaning. I am so nervous because of the anesthesia. For pugs anesthesia can be dangerous because of their anatomy. I am so nervous doing it.

    • Hi Rhonda, Thank you so much. Yes I served to my friends as sandwiches on ciabatta rolls. I made a dressing of mayo, ketchup, sriracha, pickle relish and spread it on the bread, the rolls were quiete large and 2 crab cakes fit on the roll then I piled on cole slaw. I just had the crab cake with cole slaw swore off bread. Percy looks so cute when he gets dolled up!!

    • Ha, well Percy kind of has snaggle teeth but the photo actually makes them look worse than what they are, they need a good cleaning but are not yellow. I think it’s the way the light hit him.

    • Yes, this pup was abandoned by his “family” left at the vet’s office. Better than the street or a kill shelter. They amputated both front legs and Bella now has a custom wheelchair. It really is so good to be able to help. Thanks so much Mollie.

      • That reminds me I’ve been meaning to sign up for insurance for Chance, especially after the money I spent for poor Gibs and I had a little help from family. I will say this, Bella lucked out – she must have a guardian angel out there! I think her abandonment was a good thing because Bella needed a very special person and obviously got one!

I’d love to make crab cakes though to tell you the truth I have no idea where I can find crab meat here, other than small in small crabs. I might do a bit of investigation to see where to get it here because I bet the results are so worth it. And yes, maybe you should make them more than once a year! xx

    I can’t eat crab but man, do those ever look good. It’s torture just looking at them! Looking at your dogs makes me feel a lot better though. I’d never be able to get anything done with all of that cuteness around.
