Crab Cakes

I make crab cakes once a year, not sure why only once but it’s sort of a tradition with me although it’s at no particular time but whenever I think of it or feel like having them. This recipe is from one of the older Martha Stewart cookbooks and is the only recipe for crab cakes I have ever used. It calls for jumbo lump  or lump crabmeat, has very little filler and is really delicious. As an aside I recommend lump not jumbo lump it makes it easier to form into patties and stays together better.  You can make your own bread crumbs by first grinding bread in a food processor then drying in the oven or use dried breadcrumbs from your supermarket. This is a super simple recipe that comes together very quickly.  They are not coated with bread crumbs although you could if you wish,  they have a nice amount of vegetables in them and are delicious served with cole slaw.

The recipe made exactly 12 nice sized cakes so my friends got a crab cake sandwich on fresh ciabatta rolls slathered with a dressing made from mayo, sriracha, pickle relish and ketchup then piled high with a homemade traditional cole slaw. I made a few changes in the recipe to suit me, Martha calls for 2 lbs crabmeat, I found 1 lb was sufficient and if I did use 2 lbs I would add an additional egg, more mayo and breadcrumbs.

Crab Cakes

Adapted from Martha Stewart Cookbook- Collected Recipes for Every Day

Makes 12 crab cakes or 22-24 appetizer size

1 cup dried breadcrumbs

2 large eggs lightly beaten

1 lb jumbo lump or lump crabmeat (picked over for cartilage)

1/2 cup chopped cilantro or parsley (I use parsley)

3 scallions  finely chopped

1 small red bell pepper- seeded and diced

1 small yellow bell pepper – seeded and diced (I didn’t have yellow so used green)

1 jalapeno pepper – seeded and diced (I used pickled jalapeño)

2/3 cup mayonaise

kosher salt and freshly ground pepper

Vegetable oil to fry

Gently mix all the ingredients together, you don’t want to break up the crab meat to much.

Form into patties, you can choose the size but make them quite thick. Heat some vegetable oil in  a skillet over medium high heat. Cook the crab cakes until browned on each side. Place them on paper towel or paper bag to drain. Serve hot. NOTE: Because there is very little filler you have to work a little to form into patties. If they absolutely won’t hold together add a little more mayo and breadcrumbs.

I happened upon a photo that the media outlet Pop Sugar took of Percy and put on their site. I was tickled to see this and thought he looked so cute smiling. This was taken at Pugs Take NYC event which by the way was a huge success raising $4150 for Pug Nation Rescue of LA and the little pug Bella has had the surgery and is being fitted for a wheelchair.

Cocktail Turkey Meatballs In Cognac Cream Sauce For Fiesta Friday #96

I hope everyone had a wondeful Thanksgiving and is spending today relaxing. This is not made with leftover turkey,  I have plenty of that but with ground turkey and this is a recipe I posted in May 2012. I tweaked it for Fiesta Friday, making the meatballs cocktail size and adding some cognac to the cream sauce to make it festive. I actually made these a week ago and they were so good I wanted to bring them to the party. Great on their own or with bread, rice or roasted potatoes.

Meatballs:
2 lbs ground turkey
1 shallot or small onion chopped
1 clove garlic minced
2 thick slices of bread soaked in milk
salt and pepper to taste

I added chopped parsley, it’s optional and if you do just a few tbs is all you need.

The Sauce:
2 cups chicken stock
3 tbs flour
1/3 cup heavy cream
1/2 cup milk
3 tbs cognac or brandy  and 1 tbs worcestershire sauce

Heat some olive oil in skillet, saute onions until they are soft. In mixing bowl add the turkey, bread soaked in milk, garlic powder, salt and pepper, when onions are done add to the turkey mixture. Stir to combine all ingredients and form into meatballs. In same skillet fry the meatballs, browning on all sides but don’t cook them through. Remove from skillet, using the same skillet with the drippings add the flour, you are making a roux, stir so that its mixed with the pan drippings and let it cook for about a minute. whisk in the the stock, cream, milk,cognac and worcestershire, season with salt and pepper and let it cook so that it thickens.
Place meatballs in baking dish and pour cream sauce over them. Bake in 400 degree oven for 15-20 minutes.

I was recently inspired to make tapas after reading a post on the very beautiful blog Laura’s Mess. She and friends/fellow bloggers get together and prepare a feast frequently and it’s like a culinary tour of the world. I decided since I love the food of Spain and I am particularly fond of small portions that I would make tapas. You can eat a variety of foods and variety is the spice of life!!

For this meal I made some of my favorite Spanish dishes, they are simple and very tasty and I find that when you set out platters of a variety of food for friends it’s fun, add some good wine to the mix and it’s a great party. You can also make some of the food in advance. The meatballs and tomato sauce and the polenta keep very well for a day or two, I also boiled the potatoes for the patatas bravas a day ahead and fried them the day of, you can also make that yummy sauce ahead.

I am not going to post recipes for all,most of the recipes are not mine,  but I will provide the link to the recipe if you want to make. I served the polenta with the meatballs and tomato sauce, the grilled merguez goes beautifully with the patatas bravas.  The shrimp, well they are great on their own and don’t forget  the cheese and olives and bread with some good olive oil for dipping. Wash it all down with wine I chose Rioja. Sangria would also be lovely with this!!

Patatas Bravas

Albondigas- Spanish meatballs (Recipe calls for pork, I used pork and beef)

Merguez (grilled)

Roasted Tomato Sauce (No recipe needed see below for instructions)

Gambas Al Ajillo- Spanish Garlic Shrimp

Cheesy Manchego Polenta

Assorted cheese. bread, olives

Lots of wine

The tomato sauce is very simple, pre heat the oven to 375 degrees. Spread cherry tomatoes and at least 3 cloves garlic on sheet pan,  I used assorted heirloom, drizzle with olive oil, salt, pepper and sprinkle generously with thyme. Bake for approximately 20-30 minutes or until the tomatoes and garlic are softened and caramelized. Crush with fork or masher and add the meatballs, simmer on low heat for approximately 45 minutes to one hour. Serve with polenta.

Polenta ( You can easily half the recipe if doing tapas)

Serves 4-6 depending on serving size

4 cups whey or water

1 cup polenta (corn meal) I used stone ground

pinch of salt

1 cup grated manchego cheese

2 tbs butter

2 tbs heavy cream, creme fraiche or mascarpone

black pepper (2 or 3 turns of the pepper mill)

In saucepan add the whey or water and pinch of salt, bring to a rolling boil. Whisk in the polenta, don’t dump it all in add slowly while you are whisking it thickens very quickly. Lower heat to low and continue whisking until its done. It takes approximately 3-5 minutes for regular cornmeal and 7-10 minutes for stoneground. Remove from heat add the butter, cheese and heavy cream. Stir until its all incorporated. Cover pan and set aside.

I baked the meatballs at 375 degree’s for 30 minutes then finished on stove top simmering in fresh tomato sauce.

 

Featured Recipe: Green Garlic Stuffed Mushrooms

Who doesn’t love stuffed mushrooms and what an ingenious was to use the bounty of beautiful spring vegetables that we are so fortunate to have this time of year. I think Pat hit the nail on the head with this lovely recipe. What a great appetizer and the flavors are so perfectly balanced and delicious. The bi-weekly contest on Food52 is all about alliums and I saw this submission and instantly fell in love! You can use white or brown for appetizer size but I was thinking how wonderful this would be as a vegetarian main course using big, meaty portobello mushrooms. You can find Pat’s recipes on her wonderful blog, In Pat’s Kitchen or on Food52 where you can see an abundance of delicious recipes. You might want to use some tender celery to make Roasted Celery Soup which just recently won the contest for best celery recipe or her utterly delicious A Tribute To Woody (Homemade Gingerale Float).

Makes 24 stuffed mushrooms

Green Garlic Confit (Molly Wizenburg’s method):

1 1/2 cups quarter inch sliced green garlic stalks (I had about 14 medium)

2 tablespoons butter

1/4 cup  water

1/2 teaspoon salt

In a small sauce pan with a lid, melt the butter and add the sliced green garlic, water and salt. Cover and gently cook the mixture over medium-low heat, stirring often until the liquid is almost all evaporated. This should take about 20 minutes. Set aside to cool a bit while you prep the mushrooms.

For the mushrooms and stuffing:

24 white or brown button mushrooms, caps about 1 1/2 to 2 inches in diameter

2 tablespoons extra virgin olive oil

4 ounces softened cream cheese

3/4 cup panko bread crumbs

2 tablespoons finely grated parmesan cheese

Remove the stems from the mushrooms (save for another use) and then clean the mushrooms with either a mushroom brush or wipe them with paper toweling.

Place the mushrooms in a bowl and toss them with the 2 tablespoons of olive oil and then place them, cap side up on a baking sheet. In a pre heated 425F oven, roast the mushrooms for 5 minutes. Remove from the oven and turn them over. Lower the oven temp to 350F.

In a small mixing bowl, combine the cream cheese, panko, parmesan and green garlic confit. Distribute the filling into the mushroom caps and then drizzle a little extra virgin olive oil over each mushroom.

Roast the filled mushroom caps at the 350F temp for about twenty minutes or until the filling just begins to brown. Let cool for a minute or two before enjoying warm.
