Happy Halloween And Some Pumpkin Spice Latte Doughnut Muffins For Fiesta Friday
How many of you have had a Pumpkin Spice Latte? They are really delicious and are a greatl hot beverage on a cold Fall/winter morning. This was my inspiration for these muffins. Pumpkin, spice, coffee baked into a delicious cake like muffin dipped in butter and rolled in cinnamon sugar. The recipe is one of my favorite muffin recipes from Food52 Cinnamon Sugar Breakfast Puffs. It’s really delicious. I wanted to switch it up a bit and add some pumpkin and coffee to mimic the latte. They are wonderfully soft and cake like with a hint of pumpkin and coffee.
I thought this would be a nice sweet treat to bring to Fiesta Friday, sorry Angie you might find some sugar granules on your floor, they are a little messy but sooooo good. There are no co hosts today so sweet Angie is manning the helm herself, Thanks Angie for always being there and if any of you would like to join the party feel free to follow the link, we need co hosts to step up to the plate.
Pumpkin Spice Latte Doughnut Muffins
Adapted from a recipe on Food52 from five and spice
Makes 12 muffins
1/3 cup melted butter
1/2 cup sugar
1 large egg
1 1/2 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/8 tsp ginger
1 heaping tsp powdered or granulated coffee or espresso powder
scant 1/2 cup whole milk at room temperature
3 tbs pumpkin puree
1/2 stick or 4 tbs unsalted butter melted
Melt butter either on the stove or in the microwave in glass or ceramic. Set aside to cool. Pre heat oven to 350 degree’s and butter or oil/spray muffin tin.
Add sugar and egg and cooled butter to mixing bowl and beat until light and creamy approximately 2 minutes. In separate bowl combine the flour, baking powder, salt and spices and set aside. Heat the milk just until warm in the microwave and add the coffee, stir in the pumpkin. On medium low speed alternately beat the flour mixture and wet ingredients only until combined. Spoon into muffin tin (NOTE: the muffins are small so spoon only a little of the batter to each) The recipe makes exactly 12 muffins. Bake for 20-25 minutes. Let cool in muffin tin until they are just warm enough to handle. Have your melted butter and cinnamon sugar ready. Dip each muffin in butter first covering the entire muffin and then into the cinnamon sugar. Enjoy immediately.
Saw these on pinterest and couldn’t resist. I miss dressing Izzy and Nando for Halloween.
Have a wonderfully spooky and treat filled Halloween everyone! I will be walking the neighborhood today taking photo’s that I will share with you all. Remember to set the clocks back an hour. Day light savings time ends at 2AM.
Hi Suzanne. You are *so* creative! I can almost smell these treats just reading about them. The images you chose are wonderful for Halloween. I just love the pug-o-lantern! Looking forward to your pictures. Happy Halloween hugs!

Yes, Mother is here they are all dressed up in their new costumes and it starts hours from now…Such hoopla!
Loved the post Suzanne!
The pug carved pumpkin is so gorgeous.
The donuts are perfect for this season. Love the pumpkin spice. And love the fact that it doesn’t have pumpkin in it ;).
The Pinterest pics of dressed up pugs are adorable.
Happy Halloween Lady!
I am keeping it healthier this year and my girls are not happy. Handing out small pretzel packs with glow in the dark sticks:)
Ha! Oh my there would be a coup d’etat here if there was no candy. Good for you doing something healthier than the sugary stuff. Thank you so much. Love all the pugs in costume and I wish I had the kind of talent that could produce that carved pumpkin. Happy Halloween!
Happy Halloween ❤️❤️
Hahaaaaaa! I love the carved pumpkin!! Happy Halloween!!
It’s great right!!! Wish I could do that.
Hi Suzanne, love the pinterest pugs….really cute costumes. Also your doughnuts are perfect for this time of year, enjoy Halloween with your neighbors!!
So are you and dogs going trick or treating now?
I am going out to mingle but my dogs passed away just recently I used to dress them in costume and take them out and they stayed with me outside when I gave out candy. This year I am going out in remembrance of Izzy and Nando.
Oh.. So those are old photos? Sorry, for your loss.. Celebrate their lives.. Its day of the dead too, remember?
Yes it is and that’s exactly what I will do. Happy Halloween and thank you!
Happy Halloween to you too. Your muffins look moist and very tempting. I bet they smell good while baking. I’ll give these a try because I have loads of pumpkin that I don’t know what to do with. Love the combination of spices…
Thank you I was just thinking I would like to make with spelt flour I bet they would be delicious. Thank you so much!!
Dear God these muffins look fantastic! I simply must make them! I know you miss your puppies today! Did you carve the pug pumpkin? That is impressive!
Thanks Michelle, the muffins are really good, not exactly a healthful muffin but they sure taste good. Oh my no, I wish I were talented enough to carve something like that,
Yum! I love how these look, but I bet they taste better than they look!
Thank you so much Susan.
This is the time of year I miss being in America the most… you guys really know how to celebrate Halloween and the festive season. These little muffins sound like a delicious way to bring even more happiness to the occasion. Yum!
Getting ready to go out now and have some Halloween fun, thank you so much. The muffins taste like Fall to me. Thanks Margot.
What a great post – so creatively illustrated! As for those muffins, they look absolutely delicious, and perfect for Halloween. Enjoy some Halloween fun tonight,
Thanks Millie, had a wonderful night tonight. So much fun got some photo’s I will post later.
Oh goody! I love to see people’s photos. Nothing much happens over here on Halloween – not like it does in the US. We have a few youngsters doing trick or treat, the little ones with their parents, but that’s about it. Some of local places hold Halloween parties but nothing on a grand scale. So, please do post some nice photos! I’ll look out for them.
Happy Halloween, Suzanne! I’m taking a little break from handing out candy. It’s after 8 and they’re still coming! And my own daughter still hanging out with her group of friends. But, these muffins!! Will make!! Hopefully tomorrow. Omg, they sound so good! XOXO
I ran out of candy after 10 minutes, I am hiding in the back of the house no lights in the front since there is no more candy to give out. Thanks so much Angie.
Hahaha…what, were you giving by the handful? 2 pieces that’s all I give! It reminds me of my earlier years in this neighborhood (400+ homes in the development) and I started giving out nickels, then dimes, then quarters when we ran out of candy, before finally turning off the lights and ignoring doorbell rings 😀
2 pieces thats all I gave each child. I bought one of those huge bags of assorted candies (ok some of it was eaten before Halloween_ but still it was a lot of candy. There were so many kids, I couldn’t give it out fast enough. It was literally gone in a blink. Hey that would be a good way to get rid of change. LOL.Happy Halloween.
Is that quite novel rolling muffins in butter and sugar? Sounds a great idea! Oh, I made the pumpkin dessert, using a variation of the cheesecake base, earlier tonight. Hmm, taste delicious. Shame I’m so late!
Are you going to post the pumpkin dessert? I love pumpkin and would love something different this Thanksgiving. Thanks so much Johnny.
If I get photos tomorrow I’ll post it. Actually, it would be good for Thanksgiving. Don’t know why I thought it only suitable for Hallowe’en.
I am searching for recipes now for Thanksgiving. I always introduce something new and this will be it this year.
I hope you had a some good Halloween fun. The muffins look fantastic and the pug carved pumpkin is darling. I think of you every time I see a pug. Hugs!
Thank you so much Gerlinde, isn’t that pumpkin great. Wish I could do that, it’s an art form.
Happy Halloween, Suzanne. Love the texture of the muffins, so moist and very yummy! 🙂
The muffins are very moist, thank you so much Linda!
Happy Halloween, Suzanne. I haven’t got time to make anything for this year. Shame! I love pumpkin spice latte as well. So your recipe can fit in my to-do- list for later. You’re so clever to add some coffee into the muffins, I love it so much. Thanks
Mochi, thank you very much. I had my first pumpkin spice latte this year and love it. I am usually not big on flavored coffee but like this one. Have a great day.
We love donut holes and I need a pumpkin recipe for them. The pumpkin carving is just adorable – did you carve that? We (a sister and I) tried to dress up her puppy but he was not interested in being a pirate!!! Halloween is all about fun – hope you enjoyed your evening – we did handing out candy (actually packages of goldfish) 🙂
Thank you so much Judi, you handed out goldfish rather than candy, good for you. Much healthier than all that sugar, Thank you so much and no I didn’t carve that pumpkin, wish I were that talented.
Oh wow, would you look at these yummy and delicious treats. I’d be afraid of eating the entire batch myself Suzanne, they look just wonderful. Look at those real cute pug pictures too, just adorable!
Aren’t those pugs too cute. Love them!! Thanks so much Loretta. I had to get those muffins out of my house, gave them away. I could easily have polished off most of them with a big mug of hot coffee. Thanks so much.
Oh I love the pug-o-lantern!
Ha, me too. Wish I were talented enough to do that. Thank you.
Oh wow these looks brilliant Suzanne. … just drooling looking at the pics….
These doughnut muffins look divine, Suzanne! Love the pumpkin spice flavour! Yum! 😀
Thank you so much Jess. Love pumpkin spicing!!
Yummy Suzanne, those would be good with some of my creamer!! LOL!! 🙂
It certainly would, glad you reminded me. I love it!!
Yummy doughnuts and love all your clicks…
Thank you so much.
These look amazing, Suzanne! I really like the spin you put on it with the pumpkin and coffee flavors. My mom used to make muffin doughnuts when I was young. We always loved them! I want to try making your recipe!
I love the doughnut muffins. they are moist and cake like, dangerous really. LOL, thanks so much Shari.
What a wonderful idea for a doughnut, Suzanne! I’m not very experimental when it comes to doughnuts, but I do love them! (I think I have 4 or 5 recipes on my site!) These are perfect for autumn, and it finally arrived here today!!! First cool day in MONTHS!
I have saved several of your doughnut recipes Christina, still have the beautiful photo of your glazed raised doughnuts embedded in my brain. Thank you so much. Yesterday it was summerlike in NYC, turned off the heat and opened the windows. This time of year the temps are up and down.
Oh that’s so sweet! Thank you! It’s so funny because it seems like our temps traded coast to coast! I FINALLY am getting a new oven (either today or tomorrow delivery)! I’ve been without one for 5 months, if you can believe it. Not too bad as I was travelling for 6 weeks and it’s just been TOO hot to turn on any oven! I’m excited to start baking now, though! 🙂
What a beautiful post and loved the donuts it’s treat for eyes dearie Suzanne 😙
Thank you so much Linda.
I have had Pumpkin Spice Latte and I really do like them. And, you put them in a doughnut muffin form… Yahoo! Forget about diet! 😀 )))
I had one for the first time a few weeks ago and thought it was delicious. It really does taste nice in a doughnut muffin. I only ate one and gave the rest away, quality control you see.
These are making me so hungry right now! They look delicious!!
Thanks so much!!
The pug pumpkin is awesome Suzanne!! Someone is an artist!
Yes for sure someone is, wish it were me. Thanks Rhonda. I would love to learn that technique.
It does look crazy hard to do!!
Oh, gosh the muffins sound delish, but I think the I pug steals the show, here! 🙂 I hope we’ll hear soon that your heart has mended enough to share with another pugsy!
Thank you so much, I know right, that pug pumpkin is the best. I hope one day soon to have another pug, right now it’s still so painful. Thank you :o)
These look heavenly! Pumpkin makes dessert recipes so moist, hard to go wrong! What an adorable costume 🙂
Thank you so much. I agree adding pumpkin makes baked goods moist and delicious.
The pugs are so cute, Suzanne! You know how to do it up right.
