A wonderful serenity has taken possession of my entire soul, like these sweet mornings of spring which I enjoy with my whole heart. I am alone, and feel the charm of existence in this spot, which was created for the bliss of souls like mine. I am so happy, my dear friend, so absorbed in the exquisite sense of mere tranquil existence, that I neglect my talents. I should be incapable of drawing a single stroke at the present moment; and yet I feel that I never was a greater artist than now.

Hi Suzanne! Guess what is on the stove simmering? Yes! This Beef Bourguignon! It smells amazing and the whole thing came together with ease. I can’t wait for 6 o’clock this evening to have a nice bowl of this goodness. 🙂 I have a question. When do the mushrooms come into play? I’ve read through the post several times and I don’t see it…I have a nice bunch of mushrooms ready to add! Thank you! I love this recipe.
Oh no I forgot to mention the mushrooms. I salute and add at the end with the vegetables. Sauté whole. Will correct now. Oh I can’t believe I forgot that.

I corrected the post, the mushrooms are sauteed in a little bacon fat while the carrots and onions are roasting.

That sauce does look so dark and rich Suzanne. I tried making the Boeuf Bourgiunon from the Juilia Child book– too complicated!! With the cool weather (finally!!!) coming in– this looks perfect. thanks.
