I had a dinner party last weekend and a very good friend brought me some truffle oil, good finishing olive oil and 2 black truffles. Quite a gift right, I am very grateful it is quite extravagent and wonderful. There is an Italian restaurant near me that I frequent and my favorite dish on the their menu is Fettucine con funghi. It’s rich and delicious and a staple whenever I eat there. I thought I would try to recreate this dish at home with some homemade (not by me) pappardelle, some shitake mushrooms from my CSA and finish with a grating of black truffles.

Since Fiesta Friday is in it’s new home, a site dedicated only to this party, and a fine home it is, I thought I would break out the truffles and celebrate. So for Fiesta Friday #61 I am bringing Pappardelle Con Funghi with black truffles. Angie@The Novice Gardener has been working hard getting our new place ready and thank goodness she has help this week from the wonderful co hosts Selma @Selma’s Table and Margy @La Petite Casserole

I will make a confession, this is not really a recipe, I didn’t measure anything. For that reason I will list the ingredients and the approximate amounts. I have been cooking long enough that I can guesstimate. Honestly though, you really don’t need a recipe just eye ball the ingredients it will work out.

Pappardelle Con Funghi

Serves 3 generously 4 more modestly

1 small onion peeled and diced

mushrooms ( I used shiitake) approximate 2 cups of cleaned and sliced mushrooms

2 cloves garlic thinly sliced

white wine (approximately 1/3 cup)

Stock – I used homemade mushroom stock you can use whatever you have- approximately 1/2 cup

2 sprigs of fresh thyme

heavy cream approx 1/4 cup

1 tbs butter

splash of olive oil for the pan

salt and pepper to taste

parmigiano

black truffle (optional)

parsley to garnish

Heat the olive oil in a skillet, add the butter and the diced onion, saute until soft and transluscent. Add the garlic and continue to saute until the garlic softens. Add your mushrooms and saute until the mushrooms are soft and lightly browned. Now add the wine, cook down for approximately 3-4 minutes and then add the stock and the thyme. Cook until reduced by about half, now add the cream and continue to cook until the sauce thickens. Adjust seasoning and keep on low/simmer.

Bring large pot of  generously salted water to a boil when the water comes to a rolling (vigorous)boil cook the pasta. Turn up the heat on the mushroom sauce and add the al dente pasta, cook for about 2 minutes. Transfer to bowl, garnish with parsley, sprinkle with cheese and serve.

  2. It’s a long time since I bothered to check the post for invites! Nor anything else.
    I don’t think I’ve ever had real truffles. Oil, yes. Huh, another ingredient to look forward to trying. Oh, I do love mushrooms. And your sauce sounds perfect. Especially for these chilly nights – in my case, home-alone!

    • It must be those darn oversea’s flights. LOL, I too love mushrooms, shitake I find especially flavorful and love cooking with them, We are still having chilly days and nights here so this was a nice hearty meal. Thank you Johnny, I ate it alone also.

  3. Suzanne, this is such a great post. Educational too (i wouldn’t have known what to do with a truffle). I love the Italian names. My imagination kicked in when you spoke of your restaurant. I can just imagine Maestro Martino being delighted with this dish. …And he’d be so excited to see you prepare it that he’d probably get the cold sore he gets for lusting! Mega-hugs!

  4. Do you know that this is my favorite way to eat pasta! Garlic, mushrooms, white sauce. Amazing combination. I have never tried truffle. Never ever! Time to truffle shop now. Loved the colors and the flavors there.

      • I once had a friend bring me the “real deal” back from Italy and didn’t (then) know what to do with them. I came up with an amazing salmon dish and at the same time, became addicted to truffles. My husband is still on the fence.

    • Thanks Serena, cheating, LOL!! Honestly if it weren’t for my friend I wouldn’t have truffles other than oil in the house, they are an extravagance I only allow mysefl in restaurantgs.

    • Thanks Em, her husband was in the restaurant business and was from Italy and got the most amazing and delicious foods from his contacts. She has a pantry full of wonderful imported foods from Italy.

      • It’s true I think. The only recipes I really follow are baking and thats only because it’s important from a scientific perspective. But you can still even take creative license with flavorings. I love playing with food.

  18. This looks Yummy! Have had truffles once before and it was in pasta when in Florence. I ate it slowly and savored every morsel as I didn’t know when I would have it again. It’ been 25 years! This dish looks beautiful and very inviting!

      • Of course Italian and because the dish is rich and delicious I would select one of my favorites: Brunello di Montalcino, Ripasso, or a really well aged Barolo! I think the combo would be pure heaven!

  56. Yesterday, on a TV cooking program, the chef had a storage container full of truffles. I remembered the stake I had with truffle sauce (it has a name I cannot remember).
    Dishes I cook often, I eyeball the ingredients too. So, when I write a recipe for the blog, I have my scale and everything ready to put everything I use in measurement.
    This is my kind of pasta. Creamy and with intense flavor. 😛
