Pappardelle Con Funghi With Truffles For Fiesta Friday #61
I had a dinner party last weekend and a very good friend brought me some truffle oil, good finishing olive oil and 2 black truffles. Quite a gift right, I am very grateful it is quite extravagent and wonderful. There is an Italian restaurant near me that I frequent and my favorite dish on the their menu is Fettucine con funghi. It’s rich and delicious and a staple whenever I eat there. I thought I would try to recreate this dish at home with some homemade (not by me) pappardelle, some shitake mushrooms from my CSA and finish with a grating of black truffles.
Since Fiesta Friday is in it’s new home, a site dedicated only to this party, and a fine home it is, I thought I would break out the truffles and celebrate. So for Fiesta Friday #61 I am bringing Pappardelle Con Funghi with black truffles. Angie@The Novice Gardener has been working hard getting our new place ready and thank goodness she has help this week from the wonderful co hosts Selma @Selma’s Table and Margy @La Petite Casserole
I will make a confession, this is not really a recipe, I didn’t measure anything. For that reason I will list the ingredients and the approximate amounts. I have been cooking long enough that I can guesstimate. Honestly though, you really don’t need a recipe just eye ball the ingredients it will work out.
Pappardelle Con Funghi
Serves 3 generously 4 more modestly
1 small onion peeled and diced
mushrooms ( I used shiitake) approximate 2 cups of cleaned and sliced mushrooms
2 cloves garlic thinly sliced
white wine (approximately 1/3 cup)
Stock – I used homemade mushroom stock you can use whatever you have- approximately 1/2 cup
2 sprigs of fresh thyme
heavy cream approx 1/4 cup
1 tbs butter
splash of olive oil for the pan
salt and pepper to taste
black truffle (optional)
parsley to garnish
Heat the olive oil in a skillet, add the butter and the diced onion, saute until soft and transluscent. Add the garlic and continue to saute until the garlic softens. Add your mushrooms and saute until the mushrooms are soft and lightly browned. Now add the wine, cook down for approximately 3-4 minutes and then add the stock and the thyme. Cook until reduced by about half, now add the cream and continue to cook until the sauce thickens. Adjust seasoning and keep on low/simmer.
Bring large pot of generously salted water to a boil when the water comes to a rolling (vigorous)boil cook the pasta. Turn up the heat on the mushroom sauce and add the al dente pasta, cook for about 2 minutes. Transfer to bowl, garnish with parsley, sprinkle with cheese and serve.
I’ll never forgive the Post Office for losing my invitation to your dinner party Suzanne, Please accept a huge virtual bunch of flowers and this virtual magnum of champagne to apologise for my absence.
xxx Sending Massive Hugs xxx
David I set a place for you but knew there was a reason you didn’t show, darn the post office. I can tell you that I would like nothing more than to have you for dinner. It would be great fun I just know it. Hugs back!!!
It’s a long time since I bothered to check the post for invites! Nor anything else.
I don’t think I’ve ever had real truffles. Oil, yes. Huh, another ingredient to look forward to trying. Oh, I do love mushrooms. And your sauce sounds perfect. Especially for these chilly nights – in my case, home-alone!
It must be those darn oversea’s flights. LOL, I too love mushrooms, shitake I find especially flavorful and love cooking with them, We are still having chilly days and nights here so this was a nice hearty meal. Thank you Johnny, I ate it alone also.
Suzanne, this is such a great post. Educational too (i wouldn’t have known what to do with a truffle). I love the Italian names. My imagination kicked in when you spoke of your restaurant. I can just imagine Maestro Martino being delighted with this dish. …And he’d be so excited to see you prepare it that he’d probably get the cold sore he gets for lusting! Mega-hugs!
Oh the Maestro, love him and I bet he would really enjoy this pasta dish Thank you so much for your kind and encouraging words. It means the world to me. Hugs back!
Do you know that this is my favorite way to eat pasta! Garlic, mushrooms, white sauce. Amazing combination. I have never tried truffle. Never ever! Time to truffle shop now. Loved the colors and the flavors there.
I love it too, the mushrooms give such a wonderful deep and earthy flavor to the sauce. I would also be good on rice I think. Thank you so much Sonal, I have eaten truffle but never actually owned one it is such a treat having one that I can use. They are wonderful.
Oh my! I’m jealous as hell..have only had truffles once in my life…and with pasta!…again, Oh my!
Pasta and truffle are really a lovely marriage. Thank you so much Pat.
I have a particular soft spot for truffles. The more the merrier. Pungent is just fine with me!
Me too Stacey. I have the oil but have never actually owned the real deal it is so nice, Thank you so much.
I once had a friend bring me the “real deal” back from Italy and didn’t (then) know what to do with them. I came up with an amazing salmon dish and at the same time, became addicted to truffles. My husband is still on the fence.
They can be an acquired taste for sure. I am a fan, you only need a little and it goes a long way
Mushrooms AND truffles??? Why…that’s almost cheating!!! 😉 yum…
Thanks Serena, cheating, LOL!! Honestly if it weren’t for my friend I wouldn’t have truffles other than oil in the house, they are an extravagance I only allow mysefl in restaurantgs.
What a fantastic and generous gift! I wish I had your lovely friend over for dinner!!! Fantastic dish, Suzanne! I adore truffles! 🙂
I was blown away, thanks Francesca, it was such a great hostess gift, I love truffles also and they were wonderful with the mushrooms!!
I also love the pungent flavor of truffles and I never say no to mushrooms. Your “Papardelle Con Funghi” looks fantastic .
Thank you Gerlinde, I also love them and the combination was really wonderful.
I never had truffles but I think I would like it… This dish sounds amazing, and how can you not like homemade pasta with such delicious sauce😋 yum!
Thanks Olga, truffles are really nice a really wonderful indulgence.
I’m a firm believer that every Friday is a fiesta, but this food certainly sets the mood. 🙂
You are 100% right on that one. Thanks so much.
Yum! Mushrooms and truffle, perfect match! You have such an amazing friend!
I really do, I couldn’t believe my eyes. Thanks Jasline.
Yum indeed!!!! What lovely gifts you were given! 🙂
For sure, thank you so much.
I can’t accurately describe how desperately I want to eat that whole bowl of pasta. And what an incredible gift- where did your friend get the truffles???
Thanks Em, her husband was in the restaurant business and was from Italy and got the most amazing and delicious foods from his contacts. She has a pantry full of wonderful imported foods from Italy.
What a fantastic friend to bring you truffles! I’m sure you savoured every single bite 🙂
She is a very good friend. Thank you Cristina!
I sometimes list my recipe’s ingredients in the same way. cooking is such common sense, and I try to encourage people to put their own stamp on a dish, so to speak. Your pasta is just beautiful!!!
It is and everyone tends to tailor a recipe to their own taste, for a simple pasta dish like this I don’t like to tie anyone to specific amounts. Thanks so much Mimi.
In my experience from teaching cooking lessons, women are much worse than men about following a letter to a T. don’t know why.
It’s true I think. The only recipes I really follow are baking and thats only because it’s important from a scientific perspective. But you can still even take creative license with flavorings. I love playing with food.
Oh wow, what a luxurious dish Suzanne! I am going to get myself to Alba one of these days & get myself some truffles! Fabulous 🙂
It’s a real treat, thank you so much.
This looks Yummy! Have had truffles once before and it was in pasta when in Florence. I ate it slowly and savored every morsel as I didn’t know when I would have it again. It’ been 25 years! This dish looks beautiful and very inviting!
Thank you it is perfect with pasta. I don’t know the next time I will actually truffles again (besides the oil) I am trying to do the same.
This looks incredible! I can guarantee we’d have no leftovers in my house! 🙂
Thank you it was such a nice dish, we had no leftovers.
Yum, indeed. I wish i had been a guest at your recent dinner party, I bet the food was divine. 😉
Thank you so much. I love having friends over for dinner, it’s always great to share food and wine and good converstation.
Oh, my mouth is just watering so much, Suzanne!! The thought of the truffles and thyme….driving me crazy with the thought! 🙂
Thanks so much. The combination was delicious.

Thanks Cheryl, it was a busy weekend. Just now catching up.
Hi Suzanne, good!!! Hugs to Nando xo
Yes please! Decadent and delicious. Pasta and truffles, a match made in heaven.
Thanks Michelle, would be curious what wine you would serve with this.
Of course Italian and because the dish is rich and delicious I would select one of my favorites: Brunello di Montalcino, Ripasso, or a really well aged Barolo! I think the combo would be pure heaven!
I think your recommendation is excellent and will look for both to try when I make this again. Thank you.
Wow this dish sounds something new to . me- lovely combo of flavours/ herbs in there. .. looks amazing…

Thank you so much. Love your site, Persian food is my favorite food. Will be checking out your recipes.
Why you do this to me… I already had dinner cooked, and now I think I’ll have to prepare this fantastic alternative!
I’m sure whatever you made is amazing. Happy holidays to you and yours!
This is a great dish. Now to find truffle oil.
Thank you so much I love truffle oil, so many different uses for it too!
You have given me a reason to buy it!
Yesterday, on a TV cooking program, the chef had a storage container full of truffles. I remembered the stake I had with truffle sauce (it has a name I cannot remember).
Dishes I cook often, I eyeball the ingredients too. So, when I write a recipe for the blog, I have my scale and everything ready to put everything I use in measurement.
This is my kind of pasta. Creamy and with intense flavor. 😛
(BTW Susanne, I published my first post on the new site a few hours ago. Can you see it in your Reader? If you do, I’m glad. If not, and you are interested to sign up for e-mail notifications, please do so at fae-magazine.com.) Thanks, 🙂

What a good friend! I love truffle anything, but actual truffles are the best! Your pappardelle look absolutely fabulous, and it just so happens to be my mother’s favorite pasta (esp with mushrooms). I think I will try your recipe when she’s back in June!
Thanks Christina, it is a really delicious recipe. I love mushrooms and truffles too so this was just what I was wanting.
I love how simple, yet delicious this pasta dish is! I feel as though I can just smell how yummy it is just from the photos. Great work, as usual 😀
