Happy Mothers Day Blueberry Waffles
Mothers Day Breakfast is homemade blueberry waffles with melted butter and real maple syrup. My favorite waffle recipe is on Food52, Aretha Frankensteins Waffles of Insane Greatness. They really are wonderful, light, crispy and utterly addictive. I sometimes like to add blueberries either frozen or fresh to the batter. I always double the recipe because I freeze them and heat in the toaster or oven, they make a fantastic quick breakfast!
Serves 2 to 4
3/4 cups all-purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup whole milk or buttermilk (or a combination)
1/3 cup vegetable oil or melted butter
1 egg
1 1/2 teaspoon sugar
3/4 teaspoons vanilla extract
Optional blueberries, frozen or fresh at least a cup
Butter and pure maple syrup, for serving
In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the milk, vegetable oil, egg, sugar and vanilla and mix well. Let the batter sit for 30 minutes.
Heat a waffle iron. Follow the directions on your waffle iron to cook the waffles. Serve immediately with butter and pure maple syrup or hold in a 200 degree oven, directly on the rack (don’t stack them or they’ll get soggy). These also reheat very well in the toaster.
I want to wish all of you a very Happy Mothers Day I hope you are going to relax and spend time with loved ones. Have a wonderful day!

Thank you, it was a really nice day!
Happy Mother’s Day, Suzanne! Hope you had a relaxing day. My hubby tried his best to make it as relaxing as possible for me, but of course as a mom of a 4 year old boy, that’s kinda impossible. 🙂 great day regardless! I’m on the market for a waffle maker, I actually don’t own one but I’m going to save this recipe for when I do. 🙂
You are so right being the mother of a little one you are constantly running around keeping up with them, feeding, cleaning etc… there is no real rest for Mothers but your husband is a doll for trying to make your day as relaxing as possible. Hope your day was at least a little relaxing and that you had a great time with family.
Yes, Suzanne- it was great regardless. 🙂 Hope yours was as well.
Your waffles look delish, Suzanne. Adding blueberries makes them a health food, right?? 😉
LOL, Patty yes of course they are health food with blueberries. Sometimes I do make them more healthful by using whole wheat or buckwheat flour. Still delicious.
Ahhh – these waffles sound amazing – since I subscribe to the “every day is mothers day” movement, I can have these tomorrow – since I missed seeing this this morning! 🙂
Thanks for sharing this Suzanne – Happy Mother’s day to you!
Every day is Mothers day and should be. You are so right, enjoy the waffles and hope you had a really great day yesterday.
Oh wow! I’m not able to calculate the last time I’ve eaten waffles! That’s great my dear… I hope you had a great Mother’s day Suzanne!
I prefer waffles to pancakes most of the time, they are so good. Thank you so much,
Waffles of Insane Greatness? Love it! Yes please 🙂 Looks like your Mother’s Day started well. Hope the rest of it was as lovely. Happy Mother’s Day to you.
I know isn’t that name hilarious, I love it. Thanks Liz and hope you had a wonderful day,
I need to get the waffle iron out again – these do look insanely great! Love the blueberries in them and your tips for freezing & reheating for a quick breakfast, great ideas!
Thank you, yes I like to double the batter and make extra to freeze, they are such a wonderful quick breakfast just pop in the toaster and you are ready. Hope you had a great day.
Oh Suzanne these have my mouth watering! They look soooo good. Waffles and pancakes are right up there as my favorite foods. Total comfort food and yours look fabulous. Funny, I used blueberries for Mother’s Day breakfast too. I made everybody blueberry muffins. They are my husbands favorite.
Happy Mothers Day Brandi, ooohh I bet your blueberry muffins are amazing. Hope you had a really great day.
A dish apt for mothers day! Looks gorgeous!
Thank you!
These look so tasty….Leslie Knope would be proud 🙂
Is that the person behind the wonderful waffles, thats a real compliment thank you.
Those waffles look so deliciously crispy! Makes me realize that I need to buy a waffle maker. I love waffles so I don’t know why I haven’t thought about buying a waffle maker before..
Oh they are wonderful, I love waffles. Thanks Julian, when I lived in Italy I had a Belgian waffle maker you hold it over the gas flame on the stove and flip it. It was interesting because you had to get to know how long to cook it on each side in order for it to be crisp and completely done. I like my electric one now, it lets you know when they are done and has settings for degree of doneness.
Waffles are the PERFECT brunch food, hands down, and yours look lovely Suzanne! Happy belated Mother’s Day.
Thank you and same to you! Hope you had a really nice day with your family.
I love waffles and I eat them all the time! They are super tasty!
Love them too, hope you had a great Mother’s Day!
how I love waffles ! It’s really funny because here in France our waffles are completely different from the american ones. I love to eat them in some traditional diners with a lot of berries and some maple syrup 🙂
I do love them too, your waffles are made with yeast, right? I have a recipe for the European type of waffle that I am going to try. Thanks so much.
I’ve got to make these and keep them frozen in the freezer. That’s such a great idea. I sometimes have waffles for dinner with a salad :-). And these look so good. Hope you had a great Mother’s Day! We were in Oregon for the weekend and spent a few days driving up and back to make it a nice relaxing trip 🙂
I love being able to grab a waffle and toast it. Yep me too waffles for dinner sometimes for me too. Hope you had a nice time in Oregon and thank you!
Those waffles would be perfect on any day Suzanne. Hope you had a lovely Mother’s Day!
I hope you had a wonderful Mothers Day, thanks so much!
It’s been a very long time since I made or ate waffles. I definitely need to change that! For mothers day, I did a more savoury breakfast – eggs, bacon, smoked salmon, confit tomatoes, asparagus and mushrooms with pesto etc. I do think my mum would’ve loved these though – she adores blueberries. I’ll have to do them another weekend (appreciation all year round, right?!) xx
I prefer a savory breakfast but every now and then I love a sticky sweet buttery waffle or pancakes, it’s a nice change. The blueberries are great in the waffles but I found out they stick to the little grooves in the waffle maker and it’s harder to clean but it’s ok, they were good enough that it was worth the effort. Thanks Laura.
Out with my poor neglected waffle maker and thank you for the beautiful reminder! Happy belated Mother’s Day! ♥
Thank you , love my waffle maker.
