Mothers Day Breakfast is homemade  blueberry waffles with melted butter and real maple syrup. My favorite waffle recipe is on Food52, Aretha Frankensteins Waffles of Insane Greatness. They really are wonderful, light, crispy and utterly addictive. I sometimes like to add blueberries either frozen or fresh to the batter. I always double the recipe because I freeze them and heat in the toaster or oven, they make a fantastic quick breakfast!

Serves 2 to 4
3/4 cups all-purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup whole milk or buttermilk (or a combination)
1/3 cup vegetable oil or melted butter
1 egg
1 1/2 teaspoon sugar
3/4 teaspoons vanilla extract

Optional blueberries, frozen or fresh at least a cup
Butter and pure maple syrup, for serving
In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the milk, vegetable oil, egg, sugar and vanilla and mix well. Let the batter sit for 30 minutes.
Heat a waffle iron. Follow the directions on your waffle iron to cook the waffles. Serve immediately with butter and pure maple syrup or hold in a 200 degree oven, directly on the rack (don’t stack them or they’ll get soggy). These also reheat very well in the toaster.

      • Good question, mine is really old, might be waring. I need to get a new one but this one is a work horse, it never dies. Looking at the All Clad they look nice.

  11. Happy Mother’s Day, Suzanne! Hope you had a relaxing day. My hubby tried his best to make it as relaxing as possible for me, but of course as a mom of a 4 year old boy, that’s kinda impossible. 🙂 great day regardless! I’m on the market for a waffle maker, I actually don’t own one but I’m going to save this recipe for when I do. 🙂

    • You are so right being the mother of a little one you are constantly running around keeping up with them, feeding, cleaning etc… there is no real rest for Mothers but your husband is a doll for trying to make your day as relaxing as possible. Hope your day was at least a little relaxing and that you had a great time with family.

    • LOL, Patty yes of course they are health food with blueberries. Sometimes I do make them more healthful by using whole wheat or buckwheat flour. Still delicious.

  17. Oh Suzanne these have my mouth watering! They look soooo good. Waffles and pancakes are right up there as my favorite foods. Total comfort food and yours look fabulous. Funny, I used blueberries for Mother’s Day breakfast too. I made everybody blueberry muffins. They are my husbands favorite.

    • Oh they are wonderful, I love waffles. Thanks Julian, when I lived in Italy I had a Belgian waffle maker you hold it over the gas flame on the stove and flip it. It was interesting because you had to get to know how long to cook it on each side in order for it to be crisp and completely done. I like my electric one now, it lets you know when they are done and has settings for degree of doneness.

  24. I’ve got to make these and keep them frozen in the freezer. That’s such a great idea. I sometimes have waffles for dinner with a salad :-). And these look so good. Hope you had a great Mother’s Day! We were in Oregon for the weekend and spent a few days driving up and back to make it a nice relaxing trip 🙂

  26. It’s been a very long time since I made or ate waffles. I definitely need to change that! For mothers day, I did a more savoury breakfast – eggs, bacon, smoked salmon, confit tomatoes, asparagus and mushrooms with pesto etc. I do think my mum would’ve loved these though – she adores blueberries. I’ll have to do them another weekend (appreciation all year round, right?!) xx

    • I prefer a savory breakfast but every now and then I love a sticky sweet buttery waffle or pancakes, it’s a nice change. The blueberries are great in the waffles but I found out they stick to the little grooves in the waffle maker and it’s harder to clean but it’s ok, they were good enough that it was worth the effort.
