One of the blogs I love and follow is Bonheurcuisine, Viviana is an architect and Mom to 2 pre teens, she has some amazing and delicious recipes and her blog is written in both English and Spanish. When I saw this post today it made me happy, it was like Spring had come. It sounds incredible, blueberries and coconut  baked into a light and flavorful loaf, look at that lovely crumb. Check out the recipe here.  I love the recipes and photo’s and I know you will too. This loaf is made without oil, I had to read it twice but this really moist loaf has no oil or butter. It also contains almond flour and coconut milk. I think I would love this as muffins also. Visit bonheurcuisine, I know you will enjoy!!

  1. Thanks Suzanne for sharing! You are so kind. I am so glad that you liked the loaf! And making muffins with this batter is a great idea. Or even cupcakes with a pink buttercream frosting and some blueberries on top for Valentine´s Day!

  5. Mmm, I really I like the look and sound of this. I am always on the look out for good dairy free recipes. I am not totally dairy avoidant but I try to keep my intake to the minimum. I also like the addition of healthy blueberries. 😉

  7. Looks not only delicious, but very beautiful too! You know I love almond flour since it’s my favorite flour to use, so this is a wonderful recipe. Love the blueberries too…they are my hubby’s favorite muffins that I make. Doing it as a loaf is a great idea too.

  11. Ooh, blueberry and coconut sounds fabulous! I just posted a cranberry orange muffin which looks similar in texture, but uses oil and yogurt…the coconut milk is very new to me, but I’d love to try it! Thanks for posting, Suzanne!

    • Oh that sounds delicious I love cranberry and orange. I think the moistness is provided by the coconut and coconut milk and almond meal. It really looks so delicious. Thanks Christina
