Guest Post- Cheryl “Cheffie Cooks” Wiser

Over the next few weeks I will be highlighting some of the wonderful bloggers I know who have stepped up to do guest posts. First is my dear friend Cheryl whose blog Cheryl “Cheffie Cooks” Wiser is one I have been following for a while now, I have mentioned Cheryl before on several occasions, she manages 9 blogs, 5 children and about a thousand other things all at once. How does she do it, well, I wish I knew, and she seems to do it all seamlessly. Cheryl is sharing her recipe for a seasonal favorite, Pumpkin Nut Bread.  Thank you so much Cheryl.

A Special Post for Suzanne!
I hope you will enjoy this easy and tasty Pumpkin Nut Bread for the Fall-Autumn months ahead.

Pumpkin Nut Bread

Yields one loaf (approx. 16 slices).
INGREDIENTS:
1-2/3rds cups All Purpose Flour
1 cup Sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
pinch of salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 Beaten large Eggs
one 15.5 ounce Pumpkin Pie Filling ( I use Libby’s brand, any will work)
1/4 cup Canola Oil
1/4 cup Cold water
1/2 Cup chopped Walnuts (or pecans)
Optional 1/3 cup golden raisins
PREPARATION:
I use a food processor but you can use a mixing bowl and hand mixer, add dry ingredients into processor and pulse to combine, add wet ingredients and run processor to fully incorporate batter. Fold in chopped nuts and optional raisins. Transfer to a prepared 5″ x 9″ Loaf pan and bake @ 350 for 65 minutes. Allow to cool, remove from loaf pan and slice.

      • We have decided to lock-up the home, and head to the Georgia Mountains until Hurricane Matthew moves out! The beachfront home is well insured and all precautionary measures taken. The family vehicles are loaded, the Boat is dry-docked, storm shutters in place, outdoor furniture in the pool, citrus, herbs picked and coming along for the ride to GA. All is well my friend, do not worry we are use to this. I’ll have my computer(s) with me. xoxxo (PS Tyler is coming along in his carrier-he does not mind he is a good kitty-boy! An adventure for sure…).

      • He is about 30 minutes from us I believe (south) whenever it is a category 3-4 you can not mistake its wrath, believe me I’d never up-root my children from school and activities to travel to my In-laws Summer mountain home in GA. unless I was convinced it’ll hit the coast! Hurricane Matthew is a naughty one or sure. xo

    I never really cooked much with pumpkin myself

    Perhaps that might be because I’m not that good at baking from which I have learned the hard way is most definitely an exact science

    Unlike my well taught version of cooking…from my Sicilian American grandmother…it’s a pinch of this and a handful of that according to your taste buds

    But…

    I did send your recipe to the baker in the family…my sister 🍰🍞🍩

    • Yes I know well the pinch of this and handful of that method from my Italian ancestors. I inherited a recipe in Italian from great great Grandma that had no specific amounts and my Aunt had to work on it until it was workable and now I can make it but it took years to perfect. I had to pry recipes from my mom who never measured it was instinctual. This sounds like a wonderful recipe😃

      • I know you are. I talked to Danny and he said the surf is up, light rain and windy. We do have a storm shelter on the property that holds 20 people with built in bunks, food, water, etc. just re-stocked, if necessary he’ll go into it! He is still cray-cray! I am so glad we evacuated when we did, we missed the chaotic traffic jams happening now. I always use my instincts on these storms! My parents are in their Motor Home/Coach in New Mexico visiting friends, they know where we all are and are not worried. They taught us well LOL. Nana Jean and Papa Bill are here in GA with us too. The rest of the family left the State and are with family or friends scatter here and there. We are all in communication. Your brother has lived in Florida long enough to know what he must do to be safe. Try not to worry so much about him okay. xxoo

      • Greg is keeping us all apprised via Instagram and Facebook. He lost power wind gusts up to 100 mph neighbors tree went down. He has his generator going but sparingly because there was no gas. So far so good he is fine so are his daughters and the pets. Hope Your brother is doing ok.🙏

      • I talked to him at 5 a.m. he said it was wild! Generators running currently-he has not gone into the storm shelter on the property and probably won’t? I am telling you he is cray-cray. I wrote a post a bit ago. Yep, there’s damage alright! xoxo

      • Yes, he has a generator, the windows are boarded he has food and water. He actually was going to evacuate but has pets and there were no shelters available that take pets, they were full. You are right, he has been in Florida a long time he knows the drill. Take care and thank you for passing the message from my sweet angels to me.

  8. Yum! We used to have a Bob Evans near us and they made the BEST pumpkin and banana breads. So moist. There isn’t one near us now, unfortunately.

  9. We don’t use pumpkins here in the UK in the same ways you do in the US. Most pumpkins bought in this country seem to end up carved up for Halloween rather than cooked. Your pumpkin nut bread does look wonderful, though, Cheryl, and being ‘yeastless’, it looks quick and easy to make – always a bonus. I love all fruit breads, so I’m sure to like this one!

I’m eating a pumpkin pecan “cinnamon roll” for breakfast while I type this– leftovers from friends in last night. — and Cheryl does sound amazing!! so much energy!
