No Bake Chocolate Cheesecake Low Sugar
I am working very hard to change my eating habits and as I’ve mentioned before one thing I have a real problem with is going without dessert. I made that cheesecake with the fruit topping which was delicious but I wanted to try something I didn’t have to bake. This is really a non recipe, only a few simple ingredients but it turned out absolutely delicious. Again it’s all about portion size and I made these in little cupcake papers. They are tiny but just enough to satisfy. What I love about this is that there is no cooking or baking required and it’s ready in a flash.
No Bake Chocolate Cheesecake
Makes 6
8 oz cream cheese
2 tsp organic stevia
1 tsp vanilla
3 1/2 oz dark chocolate broken into pieces
1/2 cup half and half or heavy cream
Carrs whole meal biscuit
chocolate to drizzle
ground hazelnuts to garnish ((I used King Arthur toasted hazelnut flour)
Heat the half and half or heavy cream in the microwave to scalding approximately 40 seconds. Add the chocolate and let sit for 5 minutes. Stir until smooth, if you need to put it back in the microwave do it for 20 seconds.
Place cream cheese,stevia and vanilla in the food processor and pulse until creamy. Add the chocolate mixture and process for a few seconds until combined and it’s smooth.
Place a whole meal biscuit at the bottom of the cupcake liners and spoon a little of the cheesecake mixture on top. Smooth the top and refrigerate until set. About 4 hours.
I used cupcake cups with straight sides but you can use regular cupcake liners. Removing was fairly simple, I ran a small flexible offset spatula to loosen the edges then tore the cupcake paper to release and using the spatula I lifted the cheesecake onto the plate.
Serve with a drizzle of chocolate sauce and a sprinkling of ground hazelnuts.
I have the same problem Suzanne, I just have this thing about sweets and I am also working on it. Now, that I am back home again I can satisfy my sweet tooth by making these cute little cheesecakes and not feeling too guilty . I am going to put stevia on my shopping list and give it a try.
I am getting used to using stevia, to make things low sugar you can use half stevia and half sugar just to get yourself accustomed to it. You don’t really know these are low sugar by the taste, the dark chocolate provides a little bit of sugar and when combined with the stevia it really is indistinguishable. Thanks so much.

This looks great. Perhaps you could try it with milk instead of cream and with low-fat cream cheese to take out even more calories.

I have to admit I am partial to milk chocolate for eating, for baking dark chocolate. I love this chocolate cheesecake, it’s not overpoweringly chocolatey but there is enough that you know it’s there.

A very creative way to make a healthier version of one of my favorite desserts! How do you feel about stevia as a sugar substitute? I’ve tried a few out but have yet to find one that I really like.
Hi Heather, I chose to use Stevia because it’s natural from plants, it’s sweet and I buy the organic stevia both in powder and drops. I like it. It’s hard to explain how I like it instead of sugar, it’s different. You know how when you taste something and you feel like something is missing, you can’t quite put your finger on it, well thats how I initially felt about stevia. It is good but not exactly good like sugar, that said I have become accustomed to it and it is sweet and flavorless like sugar. I don’t think I would bake with it or would do half half maybe. I use it in my coffee, certain desserts, and its a great sub for sugar. I have found that since using stevia my desire for sugar has waned a little which is a good thing. These cheescakes are low sugar, there is sugar in the dark chocolate, not much but it’s there and it’s added just enough to make these virtually undetectable as low sugar. Thanks so much.
Thanks for such a great response Suzanne! I’ve only tried the artificial replacements and have been generally unsatisfied. I’ll have to give Stevia a try, I didn’t know that it was natural. I hate the idea of all the chemicals packed into Splenda and the like. I’d love to be a little less reliant on sugar in my diet. It amazes me how my body can truly crave it. Thanks Mary, if your local supermarket doesn’t carry them or specialty store then they may be available online. They are everywhere here, almost any store around here has them. I forget sometimes that may not be the case elsewhere. In a pinch just use a graham cracker.
