No Bake Chocolate Cheesecake Low Sugar

img_5661

I am working very hard to change my eating habits and as I’ve mentioned before one thing I have a real problem with is going without dessert. I made that cheesecake with the fruit topping which was delicious but I wanted to try something I didn’t have to bake. This is really a non recipe, only a few simple ingredients but it turned out absolutely delicious. Again it’s all about portion size and I made these in little cupcake papers. They are tiny but just enough to satisfy. What I love about this is that there is no cooking or baking required and it’s ready in a flash.

No Bake Chocolate Cheesecake

Makes 6

8 oz cream cheese

2 tsp organic stevia

1 tsp vanilla

3 1/2 oz dark chocolate broken into pieces

1/2 cup half and half or heavy cream

Carrs whole meal biscuit

chocolate to drizzle

ground hazelnuts to garnish ((I used King Arthur toasted hazelnut flour)

Heat the half and half or heavy cream in the microwave to scalding approximately 40 seconds. Add the chocolate and let sit for 5 minutes. Stir until smooth, if you need to put it back in the microwave do it for 20 seconds.

Place cream cheese, stevia and vanilla in the food processor and pulse until creamy. Add the chocolate mixture and process for a few seconds until combined and it’s smooth.

Place a whole meal biscuit at the bottom of the cupcake liners and spoon a little of the cheesecake mixture on top. Smooth the top and refrigerate until set. About 4 hours.

I used cupcake cups with straight sides but you can use regular cupcake liners. Removing was fairly simple, I ran a small flexible offset spatula to loosen the edges then tore the cupcake paper to release and using the spatula I lifted the cheesecake onto the plate.

Serve with a drizzle of chocolate sauce and a sprinkling of ground hazelnuts.

  1. I have the same problem Suzanne, I just have this thing about sweets and I am also working on it. Now, that I am back home again I can satisfy my sweet tooth by making these cute little cheesecakes and not feeling too guilty . I am going to put stevia on my shopping list and give it a try.

    • I am getting used to using stevia, to make things low sugar you can use half stevia and half sugar just to get yourself accustomed to it. You don’t really know these are low sugar by the taste, the dark chocolate provides a little bit of sugar and when combined with the stevia it really is indistinguishable. Thanks so much.

  2. It’s awesome you are experimenting with making desserts, with a little less guilt. It’s so important not to completely deprive yourself. Great recipe!

    • Thanks Antonia, because I have my little indulgences it makes it much easier to stick with the plan.

  5. You just amaze me with your “non-recipes” Suzanne! Although I don’t have a sweet tooth, I certainly know where to look when hubby or daughter wants me to make something sweet for them. xo

    • They must have given me your sweet tooth. Thank you so much Kathryn, I wish I were like you but I have to have my sweet fix daily even if it’s yogurt and fruit. This non recipe exceeded my expectation and turned out really well.

Awesome you put some of my favorite words in a recipe, No Bake Chocolate Cheesecake, Any one of those would get my attention but all together it is definitely a recipe that I must try.

  8. This looks great. Perhaps you could try it with milk instead of cream and with low-fat cream cheese to take out even more calories.

    September 9, 2016
    • Yes that would certainly make it less calories and less fat thanks so much.

      • I had a good day yesterday and to be honest just being on campus, seeing people, walking around the Fall crisp air, that was amazing!

        September 9, 2016
      • I’ll take some of your crisp fall air, it’s 95 and humid in NYC!!

  12. Oh Yum-Chocolate is actually GOOD for you (in moderation). Have a great weekend. xo

    September 9, 2016
    • You got it, yep, moderation is key. Love chocolate, thanks so much Cheryl.

      • My SIL (one of them) is a choco-cray-cray lover but mostly enjoys dark chocolate! We always tease her-she is so skinny too!!! LOL Have a great weekend. xo

      • I have to admit I am partial to milk chocolate for eating, for baking dark chocolate. I love this chocolate cheesecake, it’s not overpoweringly chocolatey but there is enough that you know it’s there.

        September 9, 2016
  13. Beautiful chocolate cheesecake. Great recipe. I am trying to cut back on the amount of sugar I consumne as well, it’s the hardest thing I think I’ve ever done.

  14. A very creative way to make a healthier version of one of my favorite desserts! How do you feel about stevia as a sugar substitute? I’ve tried a few out but have yet to find one that I really like.

    September 9, 2016
    • Hi Heather, I chose to use Stevia because it’s natural from plants, it’s sweet and I buy the organic stevia both in powder and drops. I like it. It’s hard to explain how I like it instead of sugar, it’s different. You know how when you taste something and you feel like something is missing, you can’t quite put your finger on it, well thats how I initially felt about stevia. It is good but not exactly good like sugar, that said I have become accustomed to it and it is sweet and flavorless like sugar. I don’t think I would bake with it or would do half half maybe. I use it in my coffee, certain desserts, and its a great sub for sugar. I have found that since using stevia my desire for sugar has waned a little which is a good thing. These cheescakes are low sugar, there is sugar in the dark chocolate, not much but it’s there and it’s added just enough to make these virtually undetectable as low sugar. Thanks so much.

      September 9, 2016
      • Thanks for such a great response Suzanne! I’ve only tried the artificial replacements and have been generally unsatisfied. I’ll have to give Stevia a try, I didn’t know that it was natural. I hate the idea of all the chemicals packed into Splenda and the like. I’d love to be a little less reliant on sugar in my diet. It amazes me how my body can truly crave it. Love all the healthy desserts you’ve been posting, keep them coming!

  16. A very clever dessert- it does not appear as ” diet ” at all- so important ! Merci Suzanne, once more 🙂

    September 9, 2016
    • Merci France. Je vais essayer un autre. Trying to get creative and still satisfy.

      September 9, 2016
  17. Suzanne, you know I’m all about anything “no bake.” (The sound of the oven [or any other kind of] timer going off sends me right up the wall and onto the ceiling.)
This looks and sounds so delicious! “Diet” friendly is just a bonus. TGIF! Mega hugs.

  18. If it’s chocolate, it has to be good, right?

    September 9, 2016
  19. Looks great, Suzanne!! Plus an additional bonus since it’s no bake 🙂

    September 9, 2016
    • Huge bonus, easy and it’s hot as you know what in NYC. No ovens for me. Thanks so much Freda.

      September 9, 2016
  20. Yum! Yum! And what a coincidence as I made cheesecake too today. You read my mind. 😜
I had to google stevia as I’ve never heard it before. Seems like it’s not something easily available here.

    September 9, 2016
    • Hmmmm maybe it hasn’t caught on yet outside the US. Love cheesecake. Thanks so much Ann.

  21. Gorgeous! I love a satisfying dessert that doesn’t leave you feeling guilty. YUM!

  22. This looks like something I’d make in a heartbeat. If only I could find those doggone whole meal biscuits. T.G.I.F.

    September 9, 2016
    • Thanks Mary, if your local supermarket doesn’t carry them or specialty store then they may be available online. They are everywhere here, almost any store around here has them. I forget sometimes that may not be the case elsewhere. In a pinch just use a graham cracker.

  28. What a great little dessert Suzanne! Are the whole meal biscuits that you used similar to a British digestive biscuit/cookie or something different?

    September 13, 2016
  29. Hey apuginthekitchen! This recipe looks so good and is definitely going to be on my bucket list of healthy ways to treat myself!

When it comes to treating myself, I’m always thinking of the sacrifices I have to make in order to eat something yummy. Usually, it means that I’m going to have to exercise off the large quantites of sugar I have eaten from a slice of cake! It was only until this year did I come across cake recipes that contain little to no sugar! That literally changed my life!

I’m aware of the effects sugar has on my body, so that ‘s why I have become more conscious about it and am working towards totally cutting it out from my life. I have created this blogpost which lists 5 Ways To Treat Yourself Without Cheating Yourself. I have listed 5 sugar-free recipes which are definitely worth trying becuase they’re not only delicious, but good for the body.

I’ve created my website, Sugar Sticks, because I felt that a lot of people are unaware of how much healthier they would become even if they cut even a little bit of sugar from their diet. Sugar Sticks aims to encourage young people to look after themselves and to stick to their recommended daily sugar limit. It would be amazing if you could take some time to read this article and check out my website! Your thoughts and comments would be greatly appreciated!

I’m definitely looking forward to reading more articles from you, particularly the healthy food recipes so I can add them to my bucket list! 🙂

    • Thank you so much and I will definitely check out your site. I love sweets and the hardest thing for me is trying to balance my love of sugar with leading a healthful life style and lowering my sugar intake. Still working on it, thank you so much.
