Cranberry Orange Scones
For years I was challenged when it came to making biscuits or scones then I found this recipe on Food52. These scones are absolutely delicious, no one and I mean no one makes scones like my friend Liz Larkin, the Scone Lady of Pound Ridge. I adapted her brilliant recipe for Royal Wedding Scones, using cranberry and orange rather than blueberries. These scone are light, fluffy, moist and delicious and were perfect with some homemade devon cream (because I can’t find it anywhere I made it) and some of the mixed citrus curd. Some of these scones are for my British (Welsh) friend David Prosser/Barsetshire Diaries, who never fails to entertain and amuse with his lovely blog posts every week. I hope you like scones David because I made some for you.
As long as I was making scones, for the Tea Room and for David, I thought it would be nice to bring some to Fiesta Friday as well. Cranberry Orange Scones
Adapted from a recipe by Liz Larkin, aka Mrs Larkin, aka the Scone Lady
1 1/2 cups frozen cranberries
1/3 cup packed brown sugar
2 1/2 cups all purpose flour
1 tbs baking powder
1/2 tsp salt
6 tbs cold unsalted butter cut into tbs size pieces
1 large egg
1 cup cold heavy cream
zest of one small orange or tangerine
1 tsp vanilla extract
Add the cranberries and brown sugar to the food processer and pulse until some of the berries are broken up and mixed with the sugar. Remove and set aside, clean and dry the bowl of the processor.
Add the flour, salt and baking powder and pulse 2 or 3 times to combine. Add the butter and pulse until it resembles crumbs. Pour into a mixing bowl. In measuring cup add the cream, beat in the egg, vanilla and orange zest. Pour into the mixing bowl and stir to combine with a fork, the dough will be shaggy, don’t over mix it, it’s ok if it’s not cohesive. Add the cranberry sugar mixture and gently stir with a fork just to combine.
Prepare your work surface by scattering some flour and dump the dough onto it. Bring it together gently with your hands lightly patting it into a circle. Cut into 6-8 slices depending on how large you like your scones. Line a sheet pan with parchment and put the scones on about an inch apart. Place in the freezer and keep them there at least an hour you want the scones to be completely frozen. When they are frozen, you can either bake all or some. Store in ziplock bags separated by parchment until ready to bake.
To Bake:
Pre heat oven to 425 Degree’s. Remove the scones from the freezer and place on parchment lined baking sheet. Brush with cream and sprinkle sugar on them. Bake for 20-25 minutes until golden brown. Enjoy with butter, cream, jam or curd and a nice cup of tea.
To make the Devon Cream I simply combined, cream cheese, sour cream or creme fraiche and heavy cream until it’s soft and spreadable.
Wow Suzanne, what a treat for breakfast! I’ve always loved scones with clotted cream, and had my fair share when we lived in England. Love this recipe, I wonder though, could there be any substitutes for the 1 cup heavy cream? I know sometimes recipes need exactly what ingredients they call for. I like the idea of freezing some and grabbing them at a later stage. Love the combination of cranberries and oranges too, it makes for beautiful pictures on top of tasting great! Happy weekend!

I am sure you could use light cream or half and half, or even whole milk. The heavy cream makes these scones super moist but I think regular milk would be fine. I would stay away from skim or even 1% though. Thanks so much.

Oooh these look so good. I wish I had one right now. It’s all I can do to keep myself at my desk, and not dash to the bakery down the street! Scones are one of the few pastry type foods I can have with my egg allergy. Well done, Suzanne!

The scones really are good and I am glad you can enjoy even though they have egg but it’s minimal amount. One egg divided by 8 scones pretty small amount. Thank you so much. David is such a sweetheart I wanted to give him some virtual scones LOL!!

These look really splendid, Suzanne! I’m relatively new to scones. When I moved to the US – in light of my “sweet aversion” 😜 – I looked at them with suspicion. However, I’m really starting to enjoy them with a cup of coffee. I’m bookmarking these. I’m pretty sure Stefano would love them too!
These are not overly sweet at all. The cranberry is sour, a little sugar on top before baking. I also love a scone with a cup of coffee. Thank you so much Francesca, this recipe is amazing.

I love, love scones. Every Saturday morning I go to the bank and afterwards I splurge and go to Panera Bread for a scone or other delicious pastry and a Mocha or Vanilla Latte or some flavored coffee. Scones always make me think of my mother who loves to get them as a breakfast treat. I must admit that I’ve only made scones once before Suzanne and I wasn’t very pleased with my results. Oh my, these look so good. Cranberry and orange together is definitely one of my favorite flavor combinations! Also fantastic is the tip on freezing them separated by parchment, so you can pull out and bake as needed, not that these would last long enough to save in my house. 😋

The last time I made soda bread it was a disaster, had people over for St Patricks day and the bread looked great but was uncooked on the inside and if I had left it in longer it would have burnt. I don’t know what I did wrong. Chalked it up to my biscuit and scone issues. Yours looks perfect and I will try it this St Paddy’s day.
That is so frustrating! I’ve had good luck with baking at 450F for 15 minutes, then down to 400F for an additional 30 minutes. Let me know how it goes, I’m definitely curious to see if you have better results. 🍀

These scones sound really special (especially with the addition of cream). I’ve never thought of adding cranberries – I always make them with raisins or sultanas – but I bet the cranberries add a bit more ‘zing’. I’m certainly going to try these very soon. What a wonderful breakfast!
When you add fruit that is not dried it give even more moisture making these scones so moist and tender. Thank you so much.

I am remiss in commenting! These sound so good, and you went to great lengths. I’ve been wanting to post scones ever since Downton Abbey came back on, but I haven’t made them for so long…these look amazing, though and I still can’t believe you made your own Devon Cream! By the way, I just saw a recipe for Devonshire cream as it was called in an 1895 cookbook – but required whole, non pastuerized milk…:) probably preferably a springhouse, too! lol!
Thanks Mollie, yes everytime Downton comes on I get some inspiration for all things British. So bummed though this is the final season. I really loved that show. I did look up recipes for Devon cream, I would love to see that one from the late 1800’s. I do have access to unpasturized milk from my CSA.

Exactly I tried to make a recipe from the 1800’s and its all different. I think cooks back then relied heavily on instinct.

Now scones are among my favourite sweet foods to eat. I have never made them with brown sugar and I like the idea of a cranberry and orange combination. I am going to make these when January is over, January being for me, this year, a month of eating as little sugar as possible.

Love biscuits– would eat them for breakfast 3 times a week if it weren’t for all that butter– so i just stick to my oatmeal and make them when the kids come in!

What a great recipe. I make scones almost every weekend, different versions. I haven’t tried them with brown sugar yet, but i bet that adds depth. Instead of heavy cream I use greek yogurt or sour cream, but this is a perfect base for variations and so creative. I know I would love these with the fruit. Yum.

I was the worst, I mean it the worst at biscuits and scones, They were dry and hard and horrible. It’s all about having the right recipe and a light hand. Once you get that down you wil be assured of perfect scones and biscuits every time. Hope you give it a try Thank you so much,
I LOVE cranberry and orange together and used to buy scones in this flavor from a local store once in a while when I’d get together with friends, but never made them myself (and you know I am always making scones)! I make cranberry and orange muffins quite often, too. I have got to remember to make these next time I make scones! Thanks for the reminder, they look lush!
