When Fall and Winter are here my thoughts turn to mushrooms, well not all the time but a lot. I told you that I joined this new CSA, Farmigo and I just picked up my second order. They had some beautiful mushrooms. I got Shitake and Oyster. I have been wanting a piping hot bowl of Cream of Mushroom soup.  I made enough for 2 servings but you can double or triple to make more. The earthy mushroom and sage and rosemary go so well together, the flavor of the herbs is very subtle, just a hint. This soup would be great added to casseroles, pasta or just eaten as is. I used as a guide the recipe for Cream of Mushroom soup from Balthazar on Food52. This soup is dedicated to all of those who are experiencing extreme cold, snow and ice stay warm and safe. A hot bowl of soup is just what you need. Enjoy with some good bread and butter, a salad and you have a wonderful meal.

Cream of Mushroom Soup

2 generous servings

1 1/2 lbs mushrooms (I used shiitake and oyster) cleaned, woody stems removed

1 small onion white or brown

2 cloves garlic

1 small stem rosemary

1 small stem sage

splash of olive oil

splash of white wine

3 cups broth (vegetable or chicken or mushroom broth)

1/4 cup half and half

1/4 cup heavy cream

1 tbs butter

salt and pepper to taste

In large heavy pot add olive oil and the stem of rosemary and sage, let it heat on Med/high until you hear the herbs sizzle. Now add the sliced onion and garlic. Sauce stirring until the onion and garlic soften but don’t let them brown. Add the mushrooms and let cook for approximately 10 minutes or until the mushrooms give off their liquid and it cooks down. Add a splash of white wine and continue cooking for another 5 minutes so that it is reduced to very little liquid. Pour in the broth and cook for 30-45 minutes, bring to a boil then turn heat down so that it is a strong simmer about Medium heat. Once everything is cooked. remove the rosemary and sage and spoon out the mushrooms, onion and garlic and place in blender or food processor, add 1/4 cup half and half and the butter and process or blend until smooth. Add back to pot and pour in the cream. Get it good and hot and serve immediately. Note: I did not puree all the mushrooms I wanted some pieces in the soup. I also have a confession to make. I wash my mushrooms, I know thats a HUGE no no, you brush the dirt off, well brushing them doesn’t satisfy me, I wash in cold water quickly, pat dry then air dry. I know this is frowned upon but I am not liking the odds of having dirt in my food by simply brushing the mushrooms I want them clean. I hope i didn’t offend anyone just needed to get that off my chest.

    Yeah, I wouldn’t have thought of using both rosemary and sage. I guess it’s usually thyme that would be used here. And nutmeg. As I’ve got lots of sage still growing (or should that be surviving?!) I’ll have to try this. Probably without rosemary as I prefer it with toms. It’ll be nice to have something different over the weekend.

      The rosemary and sage are very understated in this, just a hint and its quite delicious, I halved the recipe so only used 1 sprig of each and it was not overpowering at all. Thanks Johnny, stay warm. I still have rosemary and sage in my garden they even survived the freeze we’ve had the last few days..

    oh now this is heaven in a bowl! I’ve always been fascinated by cream of mushroom soup, but the canned stuff leaves me wanting. Yours looks totally satisfying. Very cool to use local mushrooms, too. This would make a nice starter at a Thanksgiving table 🙂

    It’s warming up over here now but I can’t help but find this bowl of gorgeous creamy soup quite appealing… yum!!! Perfect for warming the heart and stomach on cold nights at home. I love the use of local mushrooms from your CSA… I adore the oyster variety in particular! I’m trying to buy local produce as much as possible these days, both to support local producers and for my own nutrition. Cannot wait to try this with some good bread and butter very soon.     I sometimes moan about the rain and cold here but having seen pictures of the snow in your part of the world I have decided that I should be grateful for the temperate Irish climate. The mushroom soup seems a perfect antidote to biting cold. And looks delicious too. 😉

      Yes the poor people of Buffalo have about 8 ft of snow, the temps are warming and should get up to 60 this weekend so they are afraid of flooding now. Ugh…. Warm soup is such a great thing on a cold snowy day. Thank you so much.

    Oh… Are you not supposed to wash mushrooms? Sometimes I wash them, sometimes I don’t do anything… I guess I’m an inconsistent rebel…

    But this soup looks like soothing food for the soul! I love that you left yours partially chunky; that’s how I’d do mine too. I have a BUNCH of extra mushrooms from an event; looks like I gotta whip up some of this!

      You are not supposed to wash mushrooms they say, brush off the dirt is all that is necessary but I can’t bring myself to do that, Thanks I sometimes run with scissors. Rebels unite.

    Looks very warming, Suzanne. Love your comment above about the meatballs and noodles – that alone makes this soup worthy of tripling – you can get two completely different, yet yummy meals out of one recipe!

    This looks soooo amazing Suzanne! So comforting and warm and honestly, there are few things I enjoy more than good soup. We have been eating it nearly every night. I love how hot soup makes you feel and how filling it it. I love the fresh rosemary and sage added. I’m a huge believer in adding fresh herbs to certain dishes and I know a lot of people don’t care for rosemary (they’re crazy!) but it’s one of my favorites!! I also don’t blame you about washing the mushrooms, I wouldn’t want dirt in my soup either!

    LOVE cream of mushroom soup, but I never make it with any herbs! I really think I must try a little sage and rosemary next time, as I have it growing outside, but what I don’t have is “soup weather”! Hope you are keeping warm with all that snow!

    what a gorgeous soup Suzanne – your market share is really a wonderful idea. I used to have such a thing when I lived in Melbourne. It was a service called The Flying Zucchinis. Like a treasure trove every time it arrived. Even my children loved it. And then like you are now – i’d have to get creative. I love seeing what you’re doing with yours.

      I am more than fond of sugar too, thank you. You hate soup, wow. Even chicken noodle? The mushroom soup can be disguised as a sauce for egg noodles or vegetables so it technically would not be soup then. Thanks so much
