When I first started my blog I tried every month or so to feature another blogger and one of their recipes, I really enjoyed doing that and it was a great way to introduce those who read my blog to someone they may not know. I don’t really know why I stopped doing that and I am going to start again. So to start out 2014 here is my first entry, I’m sure many of you know both and if you don’t you really should visit their blogs.

One of the blogs I love and follow is  Shashi the “Runninsrilankan“, she is a super fit Mom writing about fitness and food,   her recipes are delicious, healthful and easy to prepare from ingredients most of us have in our pantries. I saw her most recent post, Oatmeal Pancakes, read the ingredients and directions and thought WOW, these are easy to make, healthful and who doesn’t love pancakes for breakfast (or lunch or dinner). I had an appointment yesterday so whipped up a batch before I left and had a wonderful breakfast that really stuck with me. Honestly, I like these better than pancakes made from wheat flour. Now I did make one minor change to her recipe, instead of almond milk I used whole cows milk, next time I will use the almond milk. I’m telling you this is such an easy and delicious recipe, it has been placed in my regular breakfast rotation. Now Shashi said the recipe is for 1 serving but I made 4 pancakes which for me is 2 servings. Yesterday I had for breakfast and dinner, in the morning I had it with blueberries and in the evening with a nice knob of butter and grade B maple syrup. Yes, I had them twice in one day, they are that good. You can find the recipe by clicking here. Note: I found that letting the batter sit for an hour or so makes for a thicker fluffier pancake.

The second recipe is from Tamara at Pretty Bitches Can Cook Too, I was instantly drawn to this because first of all it’s healthful, second there is no cooking and third you make it the night before and let it sit in the refrigerator all night and in the morning grab and eat. It’s also really delicious and you can tailor to your taste. I made two of them one strawberry and one blackberry. Tamara makes with greek yogurt and coconut milk, I used plain kefir and instead of the agave I used a couple of tsp’s of honey in each, I also added some almonds that I whizzed in the food processor. This is such a satisfying meal that is no fuss at all. You may remember Tamara from a few months ago, I did a guest post on her blog and she sponsored a give away of her fabulous salsa.     I am so so glad you liked the oatmeal pancakes! And I am more glad you got 4 pancakes, I think I must have made a mistake, I got 3 pancakes-which I took to be one serving. They are filling indeed and I am so glad you liked them enough to eat them TWICE! The only reason I used almond milk is because I am severely lactose intolerant. Thats a great tip about letting the mix sit, I might have to try that this weekend.

      A super delicious and excellent recipe Shashi, honestly I don’t think I will go back to pancakes made with wheat flour these are so good. Yes, I got 4 medium size pancakes and the longer the batter sits the thicker and fluffier the pancakes were. I am so happy to have found your blog and your delicious recipes. Thank you!

      Thank you, I plan on featuring recipes from other blogs frequently, I think that when we find a great recipe whether it’s our own or not we should share. I am trying to eat healthier breakfasts and these both were perfect for me.

    As I’ve just started on my oats (with three differing types) these would be great to make. Oddly, as I never eat pancakes I have a shop-bought pack of them on my table – glaring at me as I haven’t even bothered to open them. They were massively reduced in price. 🙂
    Anyway, 1 tbsp baking powder? And I would definitely let the batter rest.

      Oh yes, resting the batter is important in my opinion and these are worth making. I really thought they were delicious!! I am not a big pancake eater, I much prefer waffles but these I loved.

        Thank you so much, at this point I honestly don’t know the prognosis, I may need surgery but will know better next week when I see the doctor. It is incredibly frustrating, I guess if I were not right handed I could cope better. I really messed up my finger and hands,

      Thanks Stacey, they are lighter than pancakes made from wheat flour but oddly more satisfying, maybe because I felt good about eating them not so much an indulgence but a good for you hearty breakfast.

    Oh, I love oat flour pancakes too Suzanne! I make them all the time, but I don’t use all oat flour because since they are vegan (with no egg) they can be too dense/mushy. I went to her link and they look sooo good…what a wonderful easy recipe, my favorite kind! The overnight oats sound great too! Don’t know how I missed this post either on my email 😦
