Cauliflower Mash

My food choices lately are really pretty uninteresting and I apologize for that, my food repertoire is not that varied. Right now I am eating what works for me and my schedule and my taste and maybe later I will do a little more experimentation. This is not a recipe, and I am sure that many of you have made or tasted cauliflower as a subsitute for potatoes. It looks just like them, and really tastes very close but doesn’t have the high carb count that potatoes do. I put butter and sour cream or cream in the cauliflower just like I do potatoes. I don’t really count carbs but as a comparison I wanted to see what the difference is. One cup of cooked or raw cauliflower is 5 carbs and 1 medium size potato is 37, big difference. If you have leftover mashed cauliflower you can make soup with it, simply add some vegetable or chicken stock or even water, heat it up and you have creamy cauliflower soup.

I don’t know how cauliflower mash is usually prepared but here is what I did and it worked great.

Cauliflower Mash

Makes approximately 6-8 servings

1 large head cauliflower cleaned and cut into florets

3 tbs softened or room temperature butter (2 when you blend or process and one on top when serving)

approximately 1/4 cup hot cream, milk, half and half or sour cream (that has been brought to room temperature)

salt and pepper to taste

Place cauliflower florets in pot of salted water and boil until tender. Drain. Turn oven to 200 degree’s and put the cauliflower on a baking sheet. Place in the oven for about 45 minutes so that it dries out.  The reason for this step is that Cauliflower absorbs liquid almost like a sponge and if you process the cauliflower straight from the boiling water it will be more like soup.  NOTE: Alternately you can steam the cauliflower which would prevent it from absorbing so much water so the time in the oven to dry would be less, maybe 15 minutes.)

Put the cauliflower straight from the oven into the blender or food processor breaking it up into small pieces. add the butter, salt and pepper and a little cream or sour cream. Blend or process until smooth adding more cream as needed so that it’s the right consistency.

Percy is going to go to a Pug Meetup Halloween party next weekend and I am working on his costume, the cape was made by one of our Instagram friends at Fauxpaws Accessories. I am trying to find him a white tuxedo type bib to go underneath the cape and an amulet as well, I won’t push my luck with vampire teeth.

    Thanks for reminding me of mashed cauliflower. I’ve been very vegetable challenged lately and that is a forgotten favorite of mine. Mega hugs!

  3. Oh don’t apologize Suzanne, I practically drooled on my keyboard when I saw that melty pat of butter over the dish… YES PLEASE! I think sharing this method is great because I didn’t know about roasting it a bit to dry it out. Percy’s costume is awesome!! Gee I would do a guest post blog for you but I barely have time to post myself! (Especially now that I broke my finger in a freak (ok stupid) boat launch accident.     • You could and I have done that. I washed it and steamed in the oven by covering the pan with foil. Works great thanks so much!

I’ve always wanted to do the cauliflower mash and I love all the hints and tips I really did not know about the oven drying. I started using cauliflower my Mac and Cheese a couple years ago thanks to Mark Bittman. It’s still has noodles but it’s a lot healthier

    • Often it can be the case with potatoes as well but not as pronounced as the cauliflower. When I make mashed potatoes I put them back in the pot after draining on low heat to help the water evaporate that way your mashed potatoes are nice and thick and creamy and not loose.   18. I was immediately taken with this mashed cauliflower because of that beautiful melty pat of butter on top. It’s so interesting that you have to dry out the cauliflower before mashing it! I think this sounds delicious, and not just a replacement for mashed potatoes. I tend to think anything cauliflower sounds delicious 🙂

  24. I’m not a big cauliflower fan (/I think it tastes gross), but I am always fascinated with cauliflower mash. It looks so much like mashed potatoes, perhaps my brain could be tricked into thinking it is mashed potatoes.

      • Oh, both of those are awful, too! I can manage some cabbage, but it has to be doused in sauce. And even then, it can’t be much. I am a picky eater when it comes to veggies!

    Your cauliflower mash looks a great substitute for potatoes for anyone counting carbs. I’ll have to try some, just to see how different it tastes. I love cauliflower anyway and often make cauliflower and broccoli soup. I’ll have to try cauliflower on its own sometime.

    • You don’t really roast it. It really is just drying it out so I use a very low oven temp and let it dry, cauliflower absorbs so much liquid when boiled it is like a sponge and needs to be dried so it is not soupy. Thanks so much Gwendolyn!
